Mead is a fermented honey and water mixture. Some call it honey wine.
Recipe for orange mead.
4 lbs honey
1.5 cups- fresh pressed orange juice
1 tsp black tea
1 tsp yeast nutrient
1 package champagne yeast
3/4 gallon spring water
Bring water to a boil in pot, turn off heat- add honey, stirr until dissolved and let sit for 15 min.
add orange juice, tea, yeast nutrient to the plastic fermenter
add honey-water mixture to bucket, cover and let sit ntil it cools to 115 degrees.
put small amount of mixture into bowl, add dry yeast- let sit for 10 min then add to honey-water mixture.
stir vigorously for 2-3 minutes, cover with lid, place airlock in place
set in warm place for 2 weeks or till bubbling slows
transfer to one gallon jug for 1 year
